History records that in ancient Greece, Rosemary was said to strengthen
the memory, so students wore Rosemary in their hair, and Rosemary became
a symbol of remembrance. Brides wore Rosemary to show that they would
always remember their families and the dead would not be forgotten.
Another old belief, Rosemary would incapacitate a robber. Wash the thief's feet with a lotion made from the root and he will be deprived of the strength to steal.
When the people desperately sought protection against rampant diseases, they burned the aromatic branches as a disinfectant.
Rosemary was prescribed in the 16th and 17th centuries, for relief of intestinal gas and as a tonic and digestive aid. They suggested different preparations of the plant for toothache, gout, coughs and baldness; Rosemary has also been used as an antispasmodic.
To extend the life of your fresh Rosemary, add the stem with leaves to an empty jar. Cover completely with olive oil and refrigerate. When needed to use, remove a sprig and gently remove the excess oil back into the jar. Rosemary will last up to 9 months stored this way.

ROSEMARY HAIR TONIC
Excellent substitute for medicated shampoos
Helps control greasy hair and enhance shine and natural color.
1 cup fresh rosemary leaves
5 cups of distilled water
*Put the ingredients in a non-aluminum, non-Teflon pot and bring to a boil. Reduce heat and allow to simmer for 20 minutes. Allow to cool in the pot.
*Strain the mixture and store it in a clean bottle.
*Use after shampooing the hair.
ROSEMARY POTATO CAKES
2 cups of self-rising flour
3 teaspoons of butter softened
pinch of salt
1 table of finely chopped fresh Rosemary
1 cup of mashed potatoes freshly made
2-3 teaspoons of milk
*Preheat over to 450 degrees. Sfit the flour (I use a whisk and whisk air into the flour). Add sifted flour, butter, salt and rosemary and mix together. Mix in the mashed potato and enough milk to make a soft pliable dough.
*Roll out the dough on the well-floured surface until dough is as thin as you desire. Cut into several neat rounds with a 3 inch cutter.
*Grease a cookie sheet, place cakes on it and bake for 20-25 minuted until risen and golden color.
