Crushed leaves help heal wounds and insect bites. As a culinary herb, Lemon Balm is used as a flavoring in salads, soups, egg dishes and for making teas hot or cold.
Actions of Lemon Balm are sedative, antidepressant, relaxes peripheral blood vessels , promotes sweating, relaxing, restorative for nervous system, antibacterial, carminative and antispasmodic.
May be used as an oil, ointment, massage oil, tea infusion, tincture or compress.
Recipes
For a summer beverage, add Lemon Balm to ice cubes for additional flavored teas.,
Lemon Balm Pesto
Lemon Balm Chicken
4 medium boneless, skinless chicken breasts
2 tablespoons olive oil
2 tablespoons freshly chopped lemon balm (0r use your Lemon Balm Pesto!)
1 green onion, minced
salt and pepper
Instructions
Preheat the olive oil in a large skillet or grill pan over medium-high heat.
Pat the chicken breasts dry with a paper towel, and then sprinkle one side with lemon balm, green onion, salt and pepper.
Place them seasoned side down in the hot pan to release the flavors into your chicken.
Sprinkle the side facing up with the remaining lemon balm, green onion, salt and pepper.
Cook the chicken for for 4 minutes per side.
Garnish with leftover fresh lemon balm.
Lemon Balm Spritzer
6 tablespoons honey
1/4 cup very warm or hot water
2 cups white rum
3/4 cup freshly squeezed, lemon juice, strained
1 cup fresh lemon balm leaves, loosely packed
Club soda to top off, optional
Lemon slices, for garnish
INSTRUCTIONS
Stir honey and water in a pitcher until honey is dissolved. Add the rum and lemon juice.
Add the lemon balm and muddle with a wooden spoon. (I put 1 cup of leaves in a bowl with some of the liquid and mash this mixture; then, add back to the whole mixture for more flavor and better mashing).
Fill 8 to 10 canning jars or ice tea glassesw ith ice cubes. Divide the cocktail evenly among the glasses. Top with club soda if desired. Garnish with lemon slices and serve. (see if you would like more water first) and stir. Pour through a strainer into individual
glasses over crushed ice. Or can strain and fill punch bowl with leaves and lemon slices floating on top.
Can also add Lemon Rind Twists to your creation.
